When I visited Laos three years ago, (they say “Lao,” like “now,” but with an L) I brought back this killer green papaya salad, spicy and acid and a little sweet, pounded in a mortar to extreme complexity. You must try!

But, with a little late-summer travel time remaining for me and you both, I thought you’d like to get my take on five great eatin’ cities that are off the eaten pathI Thinner crowds…but no less spectacular food!
